Ever had hot sauce at a restaurant? I have sampled many different sauces, my favorite being the hidden “Mata la Mula” (Kill the mule) hot sauce at Tomatillo’s Mexican Restaurant (you have to ask for it). But that’s one of the few salsas that have caught my tongue. The truth is, many of the salsas I’ve had the opportunity to sample include lots of sugar, and they count on that to make them palatable.

As you will surmise, the Jala Pepa is a great one to start with. Need something a bit hotter? Amarillo is one to try. There’s a rumor that another flavor is coming out…Can’t wait to try that one.
